Makes About 360 ml (1½ cups) mix, plus spare cinnamon syrupTime 2½ hours, mostly steepingKeeps Up to 2 weeks in the fridge

  • 3 cinnamon sticks, crushed
  • 200 g (1 cup) white sugar
  • 240 ml (1 cup) water
  • 240 ml (1 cup) fresh grapefruit juice

How to make it

  1. 1Put the cinnamon, sugar and water in a saucepan. Bring to a boil, stirring until the sugar dissolves.
  2. 2Simmer 2 minutes, then take off the heat and leave at least 2 hours.
  3. 3Strain the cinnamon syrup into a clean glass bottle.
  4. 4Mix 1 part cinnamon syrup with 2 parts grapefruit juice: 120 ml (½ cup) syrup to the 240 ml (1 cup) juice. Cover and refrigerate.

Punch, also from Jeff Berry, covers the pan while it simmers and steeps, calls for white grapefruit juice, and says the cinnamon syrup alone keeps a month in the fridge.
