3Add a scoop (about 7 oz) of crushed ice and blend again until smooth.
4Pour into the coupe.
Garnish: A banana slice or dried banana chip on the rim.
Variations: Many frozen versions use a whole banana: Julie Reiner’s, in Punch, blends 1 oz each of Jamaican rum, white rum and banana liqueur with ½ oz demerara syrup, ½ oz lime, a banana and 1½ cups of crushed ice.
Difford’s also blends in a quarter bar spoon of xanthan gum, optional, to keep the drink from separating.

Hot Buttered Rum— Dark rum and a spoonful of spiced butter and brown sugar, melted into hot water: rich and warming.
Hurricane— Four ounces of dark rum with passion fruit syrup and lemon over crushed ice: big, fruity and strong.
