Cocktails with lime cordial

Make your own

Makes About 450 ml (scant 2 cups)Time 10 minutesKeeps In the fridge

  • 250 g (1¼ cups) white sugar
  • 240 ml (1 cup) hot water
  • 45 ml (3 tbsp) fresh lime juice
  • 8 g (3 tbsp) freshly grated lime peel
  • 25 g (2 tbsp) citric acid

How to make it

  1. 1Heat the water until good and hot; it need not boil.
  2. 2Put everything in a blender and blend on medium speed for 30 seconds.
  3. 3Strain through a fine strainer, bottle and refrigerate.

The citric acid gives the bracing tartness of Rose’s. The Irish Times version is a thinner cordial for diluting: the juice of 10 limes and 2 tsp citric acid in a syrup of 1 litre water and 500 g sugar, simmered briefly, with no peel.
