Jeff Berry advises against bottled passion fruit juice. PBS Food (Marc Matsumoto) starts from fresh fruit: 1 cup each sugar and water boiled for 5 minutes, then 1½ cups passion fruit pulp (about 6 fruit) stirred in for a minute and chilled; strain out the seeds or leave them in.

Swaps

Out of passion fruit syrup? In a pinch, use passion fruit liqueur. The drink will taste different, but it will still work.

Passion fruit syrup can stand in for passion fruit liqueur and passion fruit purée.
