Make your own

Makes About 300 ml (1¼ cups)Time 10 minutesKeeps A few days in the fridge

  • 300 g (⅞ cup) honey, ideally raw
  • 100 ml (⅓ cup + 1½ tbsp) warm water

How to make it

  1. 1Weigh the honey into a squeeze bottle or jar, then add one third as much water by weight.
  2. 2Shake or stir to combine. If the honey is stiff, stand the container in warm water, keeping it below 36°C (97°F) so the honey keeps its flavor.
  3. 3Let cool and refrigerate. Make only as much as you will use in a few days.

Punch’s honey syrup (for its Bee’s Knees) is 2 parts honey to 1 part hot water, a little thinner than this.

Swaps

Out of rich honey syrup? In a pinch, use honey syrup. The drink will taste different, but it will still work.
